Or you can simply relax with a glass of wine on the terrace, taking in the magnificent views as the sun sets.

The Carcassonne area 
 
The modern city of Carcassonne is built around two medieval cities, the original hill top Cité of Carcassonne on the north side of the river Aude, and the thirteenth century Bastide of Carcassonne on the South side of the River Aude. 
 
The Cité of Carcassonne is a UNESCO World Heritage site and the largest medieval town with its city walls intact. It has been the setting for many films featuring medieval castles and in recent years it has become a major tourist attraction 
 
The Bastide was built at a later date when the French expelled the inhabitants of the original Cite, not trusting them to maintain the place against allies. Today the Bastide has been swallowed by the modern city, but you can still make out the layout of the road grid 
 
During the 11th century, a religious group called The Cathars appeared in Europe and by the 13th century it was the main religion in the region much to the upset of the catholic church and a war was waged. During this period an estimated 500,000 men, women and children were massacred, this crusade has been described as one of the greatest disasters ever to befall Europe. Evidence of the Carthars still remain in the area such as the fortress of Montségur and villages of Montaillou and Prades
